At the heart of every Holtsclaw family gathering, you'll find three things in equal measure: food, family, and fellowship. Our story is rooted in this simple truth. Whether it was a major holiday feast, a birthday party, or a casual meal after a soccer practice, food and drink is always the cornerstone of our togetherness. These moments aren’t just about what is on the plate; they are about shared laughter and the feeling of belonging. It was in this spirit that, in early March of 2009, Tim Holtsclaw and his son-in-law, Steve Marshburn, found themselves doing what they always did—sitting on the back deck at a family cookout, talking about opening a restaurant one day. But that day, a real opportunity presented itself.
What began as a plan to simply buy and resell some old kitchen equipment quickly snowballed into a full-fledged passion project. Tim dove headfirst into the food and beverage industry with the support of Steve and friends/investors John Little, Jim Smith, and Darren Thompson. In a whirlwind of just two short months, a dream became a reality. They hired a staff, cleaned and remodeled the entire space, and secured investors. All that was left was to find a name that felt just right. Inspiration struck at the most unexpected time—on the 18th fairway of a local golf course. Looking up at a magnificent scrub oak tree set against a vibrant orange sunset, Tim knew he had found the perfect name. He saw a powerful symbol in the tree's small stature but big impact against the sky.
Like the tree, our restaurant has been a place of challenge and success, a cycle of growth and renewal. With the support of his wife and business partner, Gwen, the name was decided. On June 4, 2009, Scrub Oaks hung its shingle and became the newest addition to the NorthSide community. We are more than just a restaurant; we are the embodiment of a family’s dream to share our love of food and fellowship.
